Beef Based - Whole Muscle – A classic Italian whole muscle derived from the beef eye round and sliced razor thin. Marinated in Italian aromatics, orange and rosemary and a deep red wine finish. Fermented and aged  for six to eight weeks. Pairs with aged cow’s milk and young goat’s milk cheeses very well. Accompany this meat with medium bodied red wines for a pairing you won’t soon forget.
