Menu for the Week of November 18, 2013 — Thanksgiving Menu Suggestions and More!

When someone says do you want the good news or the bad news first, which do you pick?  We personally pick the bad news every time so that we can end on a high note.  And we’ve picked the same for you.

So, first the bad news:  This week will be our last week at the East Atlanta Village Farmers Market for the season.  The market will officially carry on for a week or two after the Thanksgiving break, so don’t forget about your other vendors, but we need the Meat Master John to turn his attention elsewhere on Thursday nights as we run into the holidays, so EAV’ers please take the opportunity to say “Hi!” to John and thank him for moving from New York and becoming a part of the TST family!

Now for the good news:  To make sure you get all of your Thanksgiving orders in time, we will be open on Wednesday, 11/27 at 10 a.m. instead of our normal Noon — that’s TEN HOURS of meat shopping people, so please come early and buy a lot!  And if you’re someone who can’t make it down to the shop, please remember that this week’s markets will be your last opportunity to buy meaty goodness at the markets before Thanksgiving.  So, if there is something special you need us to bring from the shop that we normally don’t bring to market, please use our pre-order function on the website to shoot us an email ASAP with your request or call us at 404-254-4958, and John should be able to accommodate your request at our markets this week.

And finally, let’s set aside the “business” of Thanksgiving and start talking about the meal, which is really what we care about, right?  This year, when we sit down with friends and family, we’ll be using TST’s meats or retail offerings in every dish we make.  First, we will be seasoning everything with the amazing salts from Beautiful Briny Sea.  Then, we’ll be setting the stage with a beautiful charcuterie plate — featuring our Lomo, Bresaola, Coppa, Pancetta, Spiced American Middle, and some of our more aromatic salamis like Genoa, Rosette de Lyon, and Finocchiona as well as cheeses from Nature’s Harmony and Crackers from Roots and Branches .  Then we delve into  brussel sprouts with roasted Calabrian Pancetta,  Fried Shallots and Citron,  Tasso Ham Angel Biscuits, Hot Boudin Sausage Balls, A Roasted Duck and Turkey Gallantine stuffed with Nduja, Dates, and Cornbread.  Next is Pumpkin and Toasted Pistachio Souffle with Beef Tallow Crust. We then finish up with Black Pepper and Truffle Creamed Potatoes and Chicken Schmaltz Gravy, and a salad of  Compressed Sweet Brandied Cranberries with Meyer Lemon and Toasted Farrow.
