Menu for the Week of May 7, 2012 — Atlanta Food & Wine Festival Starts Friday!

Our juices have really been flowing since we found out we would be doing a Cured Pairings seminar AND having a spot on Kevin Gillespie’s Whole Pig Trail at Atlanta’s Second Annual Food & Wine Festival starting this Friday!  If you’re able to make it to either session, you can expect (from TST at least) pork belly SIX ways & salami and cheese pairings with three French wines that we know will be must-haves at your next dinner party!

So what do we mean when we say our juices have really been flowing?  How about the introduction this week in the retail shop of these wonderful items — Duck Prosciutto (aged 75 days), a new Pancetta with Calabrian Chilies, and Pork & Beef Cheek Rillettes!  Additionally, our first Coppa should be ready soon, so stay tuned for that announcement!
