Greetings and Good Meat!

This week’s post, after dining at a James Beard Award winning restaurant over the weekend,  I would like to share my thoughts about the industry of food and the individuals that make it what it is today. In the years that I have been involved preparing, developing, working, and doing my best as a constant student of my craft, there is one thing I have noticed falling short, one thing that is above all the most important, the ability to finish with strength. Of all the chefs I have great admiration for, there seems to be one redeeming quality, the ability to see things through till the end. Whether you have developed an amazing technique or recipe, become a TV chef extraordinaire, or taken the grandest award for your accomplishments, I firmly believe that you must always finish strong like it was your first day on the line.

To work so hard in an industry that has very little money, so few great perks, amazing salaries, or  unparalleled rewards,  I can say that if I ever fall suit to receive a distinguished award or accolade, I would forever show the value of this by always completing a job each day to completion, like it was my first day in the kitchen.  During my endeavor to work hard every day, I strive to show respect for the chefs that came before me and continue to revere the value of a job well done so others that may come after me, will have something of value to strive for.  So, this is a request to all that have the privilege to work in our countries food system, whether it be a farmer, a cafeteria worker, or a James Beard Award winning chef or their restaurant, it is of the utmost importance that we never overlook and constantly remember, there is great and decisive reward for hard work and to never forget to consistently… finish strong!  Thank you for your time.
