To Braise: a combination-cooking method that uses both moist and dry heats: typically, the food is first seared at a high temperature, then finished in a covered pot at a lower temperature while sitting in liquid (which may also add flavor).

To Braise: makes tough, leathery meat tender, it’s done by cooking the meat slow, moist and covered over low heat for a lengthy time. This process breaks down the tough connective tissue in meat to collagen.
