So, we find ourselves without anything catchy to talk about this week, so instead, we thought we’d take the opportunity to tell you what we’ve been working on and what’s been going into the curing cave:  culatello, wet-cured bresaola, hot coppa, dry-cured lomo, kimchi salami, and saucisson a l’ail.  Additionally, the head cheese we were unable to make last week is on the menu this week as promised, along with a new fresh sausage (Boudin Blanc) and a brand new crepinette (Burgundy Beef with Cippolini Onions and Hedgehog Mushrooms)!   Stay hungry!
